Mustard Herb Roast Beef

I had a roast in the freezer and wanted to try a new way to cook it. I am all about the slowcooker so I pulled it out and found a recipe that sounded yummy. The only thing I would do differently next time is put the rub on the roast first and then brown it in the pan. The roast was good as is, but I didn't like that it didn't "crispen" up on the top, the rub just sat up there.

Pepper added by Joey - few shakes

Ingredients
Roast beef (whatever kind/cut you have/want)
2 tablespoons Dijon mustard
2 tablespoons cracked black peppercorns
1/2 cup chopped herbs (rosemary, thyme and tarragon)
2 cloves garlic, roughly chopped
1/2 cup Cabernet Sauvignon
1 cup beef stock
Carrots, peeled
Potatos, peeled

1. Season beef with salt and pepper.
2. Mix mustard, peppercorns, herbs and garlic in a bowl and rub all over the roast.
3. Pan sear all sides of the roast over medium high heat.
4. Place in the crockpot. Pour wine and beef stock over top.
5. Add as many carrots and potatos as you want to the crockpot.
6. Turn onto low for 7-8 hours.

Pulled Pork Sandwich

I made this last year and it did not turn out as I would have hoped it would. I used a boston butt cut of meat that time. This time I used porkloin and found a new receipe for cooking it.

Pepper added by Joey - None of the sandwich, some to his baked beans

Ingredients
2 pork tenderloins (one pack the comes with 2 in it)
1 bottle of rootbeer
1 bottle of bbq sauce
1/2 medium onion, sliced
Hamburger buns

1. Season pork loin with salt and pepper and brown on all sides in a skillet.
2. Add pork loin to the crockpot. Cover with enough rootbeer to fully cover the pork loin.
3. Slice onion and add to the crockpot.
4. Cook on low for 6-7 hours (I left mine in for 8 and it was fine)
5. Remove pork from crockpot and pull apart with forks.
6. Heat BBQ sauce adding a bit of the rootbeer from the crockpot.
7. Place pulled pork and onions in a large bowl. Pour bbq sauce over top. Mix well.
8. Place on a bun and serve.

Orange Chicken

Yet another recipe from Christine. Joey really enjoyed this dish but I am not sure if I like the orange. Regardless, I will try it again and see if I enjoy it.

Pepper added by Joey - 2 dashes

Ingredients
4 chicken breasts (or you could use thighs)
1/3 cup flour
1 cup orange marmalade
1 cup BBQ sauce
1/3 cup soy sauce
3 tablespoon grated ginger

1. Cut chicken into large pieces. Toss in flour.
2. Stir in all remaining ingredients.
3. Add to a slow cooker and cook for 6 hours on low or 4 hours on high.

Caution - if you have a large crockpot and it is not 1/2 full with the mixture it will take less time to cook. Mine was ready in 2.5-3 hours.

Julia's Peppery Pot Roast

Mmm pot roast. I typically do a roast with more of an onion or mushroom taste but I think that this recipe is sooo much better. Thanks Julia!!!
Pepper added by Joey - A little on the veggies

Ingredients
4 lb beef roast
2 cloves of garlic - minced
1/2 tsp onion salt
1/2 tsp celery salt
2 tsp Worcestershire sauce
2 tsp pepper
1/2 cup ketchup
3 Tbsp brown sugar
1Tbsp dry mustard
Dash of nutmeg
1 Tbsp soy sauce
1 Tbsp lemon juice
3 drops hot pepper sauce
1 cup beef stock

Bring the roast to room temperature, rub it with salt and pepper then brown it on both sides.

Place roast in the crock pot and add 1 cup of beef stock to the bottom
Mix all the above ingredients together and pour onto the roast.
Cook for 6-7 hours on high
I add potatos, carrots and onions around the roast and add them in with about 2 - 2.5 hours left in the cooking.

Beef Stew

Nothing says "its a cold Canadian winter" like hot beef stew. I have not had beef stew in hmmm about 15 years maybe even longer but Joey really wanted it so I caved and decided to make it. I used the crockpot because it is just way easier and it was nice to come home to after a long ass day at work.

Pepper added by Joey - I didn't even catch if he added any

Ingredients
2-3 pounds cubed beef stew meat
1 cup red wine
2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
2-3 tablespoon extra virgin olive oil
2 cups sliced carrots
2 cups sliced celery
6-7 potatoes, cut in fourths or eighths depending on size
1/2 cup frozen peas
8 oz. sliced mushrooms, stems removed and cut in half
2 bay leaves (or 1, if it's bigger)
1 tablespoon dried parsley
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
1 tablespoon worcestershire sauce
2 cups beef broth
1 tablespoon butter
2 small or 1 medium onion, sliced
2 tablespoons tomato paste
3 cloves of garlic

Heat olive oil in a large skillet over medium-high heat. Add stew meat, and cook until evenly browned on the outside. Cook in batches if necessary so as not to crowd the meat.

Place the potatoes, carrots, celery and mushrooms on the bottom of the crockpot. Top with browned meat, worcestershire sauce, parsley, thyme, rosemary, salt and pepper.

In the same skillet, melt butter and saute onions until softened. Add the tomato paste and cook off a bit and stir in garlic until fragrant.

Pour red wine and beef broth into the skillet, deglazing the pan and scraping the brown bits. Reduce slightly before pouring the mixture into the crockpot.

Cook on low for 7-9 hours. When done, stir in peas.

Tasty's Delicious Veggie Stew

We made Tasty's (tastyburger) veggie stew last night and it was yummy! Joe gave it a 9/10 and said that if it had chicken in it he would have given it a 10/10. I personally liked it without any meat and can't wait to have the leftovers for lunch today!

The stew turned out to be very flavourful and much needed due to the cold Canadian winter!

Pepper added by Joe - minimal

Tasty's Veggie Stew

1 15 oz can of red kidney beans
1 15 oz can of white kidney beans
1 30 oz can of spiced diced tomatoes
1 8 oz can of Hunts tomato sauce
Half a bag of frozen green peas (tasty's recipe called for green beans but I substituted with peas)
1 can of corn
3 tbsp of steak sauce
1 large onion - chopped (tasty's recipe calls for 3 onions)
3 cups of carrots - chopped
5 celery stocks - chopped
4 potatos - chopped

*** Tasty's recipe called for 1 rutabega but I have never had it before so I omitted it. If you like it I would add it though because Tasty said that it really adds a great flavour to the stew.

Add everything into the crockpot. I cooked mine for 8 hours on low, Tasty did her's for 4 hours on high.
